25 Days of Thankful! What's for dinner?
Day 8: November 8, 2010
I'm like the rest of you Moms out there....freaking busy!
So on days when I have a meeting all morning, errands to run all afternoon, laundry to do, floors to vacuum, beds to make, a bus stop to be at at 2:30, when I have to pick up child #1 up at school at 6, have child #2 at softball at 6 {being 2 places at once is always a challenge}, take child #1 to tutoring at 6:30, go back to child #2's game and cheer her on, pick child #1 up from tutoring at 7:30, race back up to child #2's softball game and sit there until 8:30, come home and do whatever homework didn't get finished and feed my family because we were too busy or not hungry at 5:30 I am crazy, literally crazy, thankful for my crock-pot!
While I'm enjoying my morning cup of coffee I throw all of the ingredients into one place, turn it on, cover it up and walk away. 8-10 hours later my family has a delicious, hot meal and Mom only has one pan to clean! Crock-pots are freaking brilliant inventions, clearly a woman's idea!

What's for dinner tonight? Crock-pot chili. 1 large can of diced tomatoes, 1 can of original Rotell, 1 can of dark kidney beans, 2 cans of light kidney beans, 1.5 pound of organic hamburger {I put it in raw} and a little water. Sprinkle the top with salt, pepper and chili powder and don't give it another thought until time to eat! I'll sometimes make thin spaghetti and pour the chili on top of the pasta and we always top it with shredded cheddar cheese. There are times when I feel like living a little dangerous so I'll set out saltine crackers. And if I really, really feel like getting crazy and walking on the wild side I'll bring out the reduced fat butter!
Note: this thankful post was written prior to child #1 getting her license so I happily announce that my craziness has been reduced but the use of my crock-pot will not be!

Don't you love being thankful for the simple things in life like crockpots? I think that we need to be recognizing the things in our lives that enable us to have such a happy life - like crockpots. So this may sound sarcastic, but I am totally serious!! Go Crockpots!

What would any busy momma with your schedule do without this little piece of genius metal? I ♥ my crock pot and although I'm not quite as busy as YOU are (i'm a little lazy at times, ok?) I still manage to use it a few times a month.
I wish I could make brownies in there. Then life would be PERFECT.

crockpots are amazing! I didn't appreciate it as much until I was a mom.
Seriously. I NEVER thought of putting chili in the crockpot. I'm not the sharpest knife in the drawer sometimes. I could use it more than I do, probably.
I LOVE crockpots. A totally genius invention for sure!
